This simple Italian desert is delicious and benefits from being made the day before, to allow for all the flavours to develop and mingle. Be careful on how much brandy you use, as we sometimes have the habit of putting in a little too much! Seriously, you could get drunk on this stuff!
- 3 packets of Savoyarde fingers
- 4 tablespoons of instant coffee
- 6 tablespoons brandy
- 3 tablespoons sugar
- 1 pint hot water
- 1 tub of Mascarpone cheese
- 1 1/2 pints of double cream
- 1 large carton of Ambrosia custard
- Cocoa and Flake chocolate for decoration
Mix the coffee with the hot water and add brandy and sugar. Leave to cool.
Mix all the cream ingrediants together (Mascarpone cheese, double cream and custard) in a mixer until thick.
Dip a third of Savoyarde fingers in coffee and layer at the bottom of a large dish.
Cover with a third of the cream mixture.
Dip another third of Savoyarde fingers in coffee again and make another layer.
Cover with another layer of the cream mixture.
Dip the remaining Savoyarde fingers in coffee and make the final layer.
Finally, cover with the remainder of the cream mixture.
Sprinkle with sifted cocoa and break the chocolate Flake into pieces and sprinkle over the top.
Refrigerate overnight or for a few hours to set.
Do not soak the Savoyarde fingers too much as they will become soggy.
An alternative is to replace 1/2 of the coffee dip with Baileys.
